Sometimes I get asked for easy chicken recipes. This is a fave thing to do with rotisserie chicken leftovers.
Classic Chicken Salad

In a large mixing bowl, combine the cooked chicken, celery, red onion, grapes, dried cranberries or raisins, and toasted nuts if using. Toss gently to combine.
In a separate small bowl, whisk together the mayonnaise, Greek yogurt or sour cream, Dijon mustard, and lemon juice until smooth and well combined.
Pour the dressing over the chicken mixture and toss until everything is evenly coated. Season with salt and pepper to taste.
Cover the chicken salad and refrigerate for at least 30 minutes to allow the flavors to meld together.
To serve, arrange lettuce leaves on plates or sandwiches and scoop the chicken salad on top. Alternatively, spread the chicken salad between slices of bread or croissants to make sandwiches.
Garnish with additional grapes, nuts, or herbs if desired, and serve immediately.
